Homemade Chicken Soup

Main ingredient: Crysbro Fresh Skinless Chicken Soup Cut / Bone-In Chicken
Ingredients
For the Chicken Base & Marinate
- 500g Crysbro Fresh Chicken (Soup Cut with bones for rich flavor)
- ½ tsp Turmeric Powder
- 1 tsp Crushed Black Pepper
- 1 tsp Ginger-Garlic Paste
- ½ tsp Salt
For the Spicy Aromatic Broth
- 1 tbsp Sesame Oil or Coconut Oil
- 1 Medium Yellow Onion, finely diced
- 2 cloves Garlic, minced
- 1 inch Ginger, finely julienned
- 1-2 Green Chilies, sliced
- 1 sprig Fresh Curry Leaves (Karapincha)
- 2 inch piece Pandan Leaf (Rampe)
- 1 small Cinnamon Stick
- 1 Medium Carrot, diced
- 1 Medium Potato, diced
- 4 cups Water or Natural Chicken Stock
- 1 tsp Crushed Black Pepper (extra for serving)
- Fresh Coriander Leaves or Spring Onions for garnish
- 1 tbsp Lime Juice
Instructions
Season the Fresh Crysbro Chicken10 minutes
In a bowl, toss the Crysbro fresh chicken soup cut with turmeric powder, crushed black pepper, ginger-garlic paste, and salt. Let it rest for 10 minutes so the spices infuse into the bone-in meat, which will create a rich, deeply flavored broth.
Temper the Aromatics4 minutes
Heat oil in a deep soup pot over medium heat. Add the cinnamon stick, diced onions, ginger, garlic, green chilies, rampe (pandan leaf), and curry leaves. Sauté for 3–4 minutes until aromatic and the onions turn translucent.
Sear Chicken & Vegetables5 minutes
Add the marinated Crysbro chicken pieces along with the diced carrots and potatoes into the pot. Stir-fry for 4–5 minutes until the chicken turns pale on the outside and releases its initial juices.
Simmer to Create Rich Broth15 minutes
Pour in 4 cups of water or natural chicken stock. Bring the pot to a rolling boil, then lower the heat, cover with a lid, and simmer gently for 15 minutes until the chicken is tender and the vegetables are soft.
Finish with Pepper, Lime & Serve1 minute
Turn off the heat. Stir in fresh lime juice and a generous pinch of crushed black pepper for that authentic Sri Lankan spicy kick. Garnish with spring onions or coriander leaves and serve steaming hot!
